Bourbon BBQ Bacon Cheeseburger Meatballs


Some nights I want the whole bacon cheeseburger experience without standing at the grill. These meatballs deliver exactly that in about half an hour. They are crisp outside, juicy inside, and coated in a bourbon BBQ glaze that caramelizes just enough to get sticky.

I first made these when I had a bottle of bourbon left from a weekend Old Fashioned and a pound of ground beef that needed a plan. The combination of smoky bacon, sharp cheddar, and that sweet-sour glaze hits every note you want from a cookout.

What builds the flavor

This is one of those recipes where every ingredient earns its place. Use 80/20 ground beef so the meatballs stay moist without turning greasy, and grab a block of cheddar you shred yourself. Pre-shredded cheese is coated in starch that keeps it from melting into the meat the way you want.

  • Ground beef. An 80/20 blend gives enough fat for juicy meatballs that hold together without excess grease.
  • Bacon. Cook it crisp and chop it fine so you get smoky bits in every bite.
  • Sharp cheddar cheese. Shred it fresh from the block so it melts into little pockets inside each meatball.
  • Breadcrumbs. Plain or seasoned, they bind the mixture and keep the texture tender.
  • Egg. The glue that holds the bacon and cheese inside the beef.
  • Bourbon. A splash in the glaze adds depth and a subtle caramel sweetness.
  • BBQ sauce. Use your favorite bottled variety or a smoky homemade version.
  • Worcestershire sauce and mustard. The sharp, savory background notes that make these taste like an actual cheeseburger.

How they come together

  1. Mix the meat. Combine the beef, crumbled bacon, shredded cheddar, breadcrumbs, egg, garlic powder, onion powder, Worcestershire, mustard, salt, and pepper in a large bowl. Use your hands and stop as soon as everything is evenly distributed so you don't overwork the meat.
  2. Form the meatballs. Roll the mixture into twenty balls, about one and a half tablespoons each. Arrange them on a parchment-lined baking sheet with space between them so they brown on all sides.
  3. Bake until browned. Cook at 400°F for 18 to 20 minutes until the tops are golden and the centers read 160°F on an instant-read thermometer.
  4. Build the glaze. While the meatballs bake, stir together BBQ sauce, bourbon, ketchup, and a little brown sugar in a skillet over medium heat. Let it bubble gently for 5 minutes until it thickens enough to coat the back of a spoon.
  5. Toss and finish. Add the hot meatballs to the skillet and roll them in the glaze until every one is shiny and sticky. Serve right away.
 

The glaze makes the dish

The bourbon BBQ glaze is where the magic happens. Bourbon cooks down with the sugars in the BBQ sauce and creates a lacquered coating that clings instead of drips. Don't skip the thermometer

Ground beef needs to hit 160°F inside to be safe. A quick read thermometer removes all guesswork and keeps you from cutting into a meatball too early.

Texture that stays tender

The biggest mistake with any meatball is overmixing. Once the egg and breadcrumbs are evenly spread through the beef, stop. Squeezing and mixing too long tightens the proteins and gives you dense, rubbery meatballs instead of ones that give way when you bite. The second trick is the parchment-lined sheet. It prevents sticking and lets the rendered fat drain slightly so the bottoms get crisp instead of soggy.

Smart swaps when needed

No bourbon on hand? Use a little apple cider or apple juice plus a teaspoon of vanilla extract for a similar sweetness. Keep and reheat leftovers

Store cooled meatballs in an airtight container in the fridge for up to three days. Reheat them in a skillet over medium-low heat with a spoonful of water and a tight lid so the glaze softens without scorching. You can also freeze the glazed meatballs on a baking sheet until solid, then transfer them to a freezer bag for up to two months.
